MASA DE CANGREJO GUISADO

Ingredients

  • 2 tablespoons olive oil

  • 1 red bell pepper, cut into small pieces

  • 1 red onion, minced

  • 4 cloves garlic, crushed

  • 1 cup tomato sauce

  • 1 dozen pitted green olives

  • 1 pound Guptill’s crabmeat

  • ½ teaspoon black pepper, freshly-cracked, or ground, (or more, to taste)

  • 1½ teaspoon salt, (or more, to taste)

  • Hot sauce, to taste (optional)

  • 2 tablespoons minced fresh cilantro, or fresh parsley, whichever you prefer

  • Wedges of 2 limes

Directions

  1. Heat the olive oil in a large skillet over low heat. Cook the bell pepper, onion, and garlic stirring frequently until the onion turns translucent. Add tomato sauce, olives, and crab meat. Cook over low heat until everything is heated through and steaming.

  2. Season the mixture with salt, pepper, and hot sauce to taste. Sprinkle with cilantro.

  3. Remove from heat, and serve alongside the lime wedges.
