Smoked CRAB STUFFED LOBSTER

INGREDIENTS 

LOBSTER:

10 Lobster Tails

3 tbsp Chipotle Garlic Seasoning or seafood Seasoning

CRAB STUFFING:

4 cups Lump Crab shredded

1.5 cup Mayonnaise

1.33 cup Panko Crumbs

5 tbsp Dijon Mustard

2 tbsp Hot Sauce

2 tbsp Chopped Scallions

2 tbsp Chopped Cilantro

4 tsp Seafood Seasoning

GARLIC BUTTER:

1 cup Clarified Butter

4 tbsp Garlic Paste

2 tbsp Chopped Scallions

INSTRUCTIONS 

  1. To prepare the crab stuffing, combine all ingredients in a bowl until they resemble the consistency of crab cakes, ensuring everything sticks together. Adjust the thickness with more mayonnaise for a denser texture or add additional panko crumbs for extra crunch.

  2. Using kitchen shears, carefully cut down the center of each lobster shell from top to tail without piercing the meat. Gently lift the meat, leaving it attached at the base, and place it on top of the shell. Make shallow lengthwise slits in the meat using a knife. Repeat for all lobster tails.

  3. Brush the lobster tails with oil and season generously with Chipotle Garlic seasoning or your favorite seafood seasoning. Shape 2-3 ounces of the crab stuffing into flat ovals and place one on each lobster tail. Top each with 2-3 shrimp, securing with toothpicks if necessary. Arrange stuffed lobster tails on a tray and chill in the freezer for 10 minutes to firm up.

  4. Preheat your smoker to 375°F for medium-high heat, optionally adding wood chips or chunks for smoky flavor. Once the smoker is ready, place the stuffed lobster tails on indirect heat and smoke for 15-20 minutes. Lobster is cooked when it turns opaque white and reaches an internal temperature of 145°F.

  5. About 10 minutes before the lobster tails are done, melt clarified butter in a basting skillet on the smoker. Gradually add the remaining Garlic Butter ingredients, mixing well. Lightly glaze the lobster tails with the butter mixture before removing them from the smoker, reserving some for dipping. After cooking, allow the lobster tails to cool briefly, then baste with a little more butter and sprinkle with chopped cilantro. Serve immediately and enjoy!
