Coconut Aminos Glazed Scallops

ingredients
1 pound fresh scallops, patted dry
2 tablespoons coconut aminos
2 tablespoons honey or maple syrup (adjust to caste)
2 cloves garlic, minced
1 tablespoon sesame oil
1 tablespoon olive oil
Sale and pepper, to taste
Optional garnish: chopped green onions, sesame seeds
Directions
Pat scallops dry with paper towels and season lightly with salt and pepper.
Whisk coconut aminos, honey or maple syrup, minced garlic, and sesame oil in a bowl until combined.
Heat olive oil in a large skillet over medium-high heat. Add scallops in a single layer (in batches if needed) and sear for 2-3 minutes per side until golden brown. Remove scallops from the skillet briefly.
Reduce heat to medium-low. Pour glaze into skillet, add scallops back, coat each scallop with glaze, and cook for 1-2 minutes until thickened and coated evenly. Stir gently.
Transfer scallops to a serving dish, garnish with chopped green onions and sesame seeds if desired.
Serve hot as an appetizer or main dish, perfect with rice or steamed vegetables.
